H= Harrell


Harrell is my new last name (as of Oct'08)! We found this cute little H in Urban Outfitters for 5 bucks so I had to have it for our new pad, can't wait to find a special spot for it!

Caramel apple bars


Finally got around to making this damn dessert last nite and it's really good. It would be good with some hot tea or coffee and a good book. GF= gluten free, but I just used regular.

Also I learned u can put brown sugar in a bowl and then fill another bowl with water and heat for 60 seconds, then 30 seconds and cont for 30 seconds until the brown sugar softens up. It seemed to take forever and it was getting late so I just dumped the brown sugar in the processer and hoped for the best- it ended up turning out fine, but now I really wonder how long you'd have to heat that brown sugar up to get it to soften. There's gotta be a better way!

*I didn't do the very last step either & sorry for the horrible photo! PS: I also learned from my friend Linda that you can try putting a slice of bread in the brown sugar bag and it will soften- not sure for how long- I think overnight.


Prep and cook time: 30 minutes

3/4 cup GF flour blend (see Pantry tab)
1/2 cup GF rolled oats, Bob's Red Mill
1/2 teaspoon coarse sea salt
1/4 teaspoon baking soda
1/2 cup brown sugar
1/4 cup butter or buttery spread, Earth Balance, softened
1/8 cup vegetable oil
FILLING
3 1/2 Granny Smith apples , peeled, cored and chopped
1 1/2 tablespoon GF flour blend (see Pantry tab)
1/2 12-ounce bag caramels


per serving: 275 calories; 2 grams protein; 9 grams total fat; 1 gram fiber; 5 grams saturated fat; 45 grams carbohydrates; 17 mgs cholesterol; 53 mgs sodium Preheat the oven to 350 degrees

[1] For the crust and topping: In a food processor, pulse the flour, oats, salt and baking soda about 3 times until the oats are slightly pulverized. Add the brown sugar, butter and shortening in and process until creamy, scraping down the sides of the bowl if necessary.

[2] Reserve 2 cups of the oat mixture. Pat the remaining oat mixture over the bottom of an ungreased 9x13-inch baking pan.

[3] For the filling: toss the apples with the flour blend in a bowl. Sprinkle the apples over the prepared layer.

[4] Heat the caramels in a small saucepan (or microwave) over low heat until melted, stirring frequently. Drizzle the caramel over the apples and sprinkle with the reserved oat mixture.

[5] Bake for 25-30 minutes or until brown and bubbly.

[6] Cool in the pan on a wire rack. Cut into bars.

how's everyone out there i wonder..found out someone i know from high school is now blind. i have certain memories of her when we just hung out together & it was always fun and cool. i see her from time to time now & know because of unexpected shit, she has had some eye issues, but to have the doctor put the needle in the wrong spot and bam! you are now blind in both eyes is a bit different. pretty fucked up really.

it's cold outside, but only know that b/c i had to put pistol's poop droppings out and it just felt cold, didn't really play in all the snow we've had in richmond...VA! here's a pic to get things started right for FEB:
